This fast easy dish is a great snack or fast breakfast.
Makes 1 Serving ( Can be doubled or tripled but adjust cooking time)
1 Egg
1 Oz parmesan Cheese ( or preferred cheese) My favorite for this dish is Pepper Jack
Finely chopped green or red peppers
Salt & Pepper to taste
¼ tsp parsley
¼ tsp Chives
Garnish: Chopped tomatoes or Salsa
Directions: In Heavy ceramic mug rinsed with water (This step makes washing mug easier)
Whisk Egg, add spices, (which add nutritional value) peppers & Cheese. Cook for 1 minute in the microwave. Adjust time for your microwave. Less if rubbery, more if too soft. Reci
